Buffalo Chicken Alfredo Casserole

Directions

  1. Cook No Yolks noodles (or equivalent) according to package directions. Drain.
  2. Meanwhile, in a large baking dish, add chicken breasts, ¼ cup buffalo sauce, salt, pepper, and ½ packet ranch seasoning. Toss until chicken is thoroughly coated. Marinate 30 minutes.
  3. In a large skillet over medium heat, heat olive oil, then add chicken. Cook 8 minutes per side, or until no longer pink. Remove from skillet and let cool, then chop into bite-size pieces.
  4. To same skillet, add butter and cook garlic. Add remaining ¼ cup buffalo sauce and cream cheese and whisk until combined. Slowly whisk in milk and remaining ranch seasoning; continue whisking until combined. Add noodles, mozzarella and chicken to skillet.
  5. Serve topped with chives.

Made this dish today as the wife was out watching the grandchildren.  I started around 3PM and other than a minor issue with cooking the chicken and needing to clean that pot up before continuing, I got done and it was ready to eat when she got home at 4:30PM.  We got some garlic that wasn't the freshest but the meal was still very good tasting.  Thanks Lynn, a very good experience preparing this.  We will have it more often.
