Potato-Cheese Soup

Directions
Place potatoes in large saucepan, add enough water to just cover the potatoes. Cook at medium-high heat until fork tender (13-15 minutes). Meanwhile, melt butter in large skillet over medium heat. Add onion; cook and stir 4-5 himutes until onion is transparent but not brown. Mix flour, Creole seasoning, red pepper, and black pepper. Add to butter and onions, cook and stir 2-3 minutes; add hot sauce, cook and stir another minute. Gradually add potatoes with water into the flour stirring to reduce lumps. Add milk 1 cup at a time until all is stirred into the skillet. Add cheese and stir until melted. Cover and simmer for 15 to 20 minutes stirring often. It is ready to serve, however, it is always better the next day.

I made a batch of this yesterday and the wife and I had it for lunch. I was amazed at how good it tastes. The next time I need to back off on the red pepper and Creole seasoning but we will definitely be making more of this in the future. Great recipe Loretta. Thanks.
12/16/21 - Made two batches today. Just for my own information, I used 1/2 tsp. of Creole Seasoning, 1/4 tsp. of Ground red pepper, 3 shakes of Black pepper and two splashes of Frank's Redhot.
