Raisin Filled Cookies

Directions

To make the filling used 2 15oz boxes of raisins.  Put in a large pot with 6 cups of water and 2 cups of sugar.  Bring to a boil and let boil for 15 minutes.  Mix 6 tablespoons of corn starch in cold water and add to pot with 4 teaspoons of vanilla and remove from heat. 

Mix remaining ingredients. Roll dough adding flower as needed to board and roll out to 1/8 to 1/4 inch thick.  Use a cookie cutter and cut rounds approximately 3 inches.  Place on round on cookie sheet, put about 2 tablespoons + of filling on the dough then cover with another round of dough.  Bake at 350 for 10 minutes and check to see if brown.  Continue baking until cookies are light brown.
